In a SAN, the nodes are the end points of the SAN and a file system is a SAN component. Nodes do not understand Fibre Channel.
The nodes communicate through ports and the ports understand Fibre Channel.
Ports communicate with other ports across a link.
The node can be a server, a subsystem, a tape device, etc. The application will be run on the server and the data will be stored on the storage (i.e. the subsystem or tape device).
The nodes do not need to understand the infrastructure they go across.
