COOKING COMPANION

Try making a cluster A cluster of roses around the base and edge of a white fondant-covered cake makes a beautiful centrepiece for any celebratory occasion. Stick the roses in position as you make them, so that they mould and fi t together neatly. You should only need light dabs of water to secure them in place. Add the leaves aſt erwards and use them to hide any mistakes or unsightly areas of visible rose base.

Celia Adams of the Bath Cake Company explain why wired sugar fl owers are a fantastic choice

It's incredible how you can make sugar fl owers look so realistic! Here are a few of our top tips to help you create beautiful sugar fl owers... Make sure to roll your fl ower paste thin enough to create a delicate looking

sugar fl ower. We love using blossom tints to colour and add an even more realistic touch to our fl owers. Remember, when they dry they can be very delicate and fragile so make sure to handle them carefully.

Rose cake pop Roses are not just for cakes; they work well on cake pops, too. Stir a little pink food colour paste into some melted white chocolate, dip the pop into the mixture, and decorate with a tiny rose. For more information, see the Compendium of Cake Decorating Techniques, published by Search Press.
