With the warm weeks of summer stretching ahead (endlessly optimistic over here!), we love having a fridge full of cold drinks that are something more than a can of coke or a bottle of squash. We’ve put together some ideas for summer coolers you can whizz up in no time from store cupboard and fridge ingredients; they all take a couple of minutes to make and the rest of the time is spent chilling – that’s the drinks, not you... They all serve 2.

Strawberry and Cherry Smoothie You can make a smoothie from any fruit but strawberries and cherries are quintessentially summer to me, full of warmth and flavour. Smoothies are more usually made with yoghurt and/or milk but when it’s really hot, I think it’s more refreshing without. As the season progresses, make it with peaches, nectarines, raspberries, melon...


100g ripe strawberries 100g fresh ripe cherries, pitted Squeeze of lime juice 150ml apple juice


Whizz everything up together with a liquidiser or hand blender. Pour over ice and serve at once or chill in the fridge and serve later.


Iced Coffee


Iced coffee is normally served with milk but we were served this no-milk version once in Bali and it really hit the spot.


3 heaped tbsp ground coffee 1-2tbsp sugar, depending on taste Plenty of crushed ice


Make the coffee by pouring 600ml boiling water on to the ground coffee in a cafetiere or jug. Stir in the sugar to dissolve.


When cold, put the jug or cafetiere in the fridge to chill completely – overnight if you can.


Fill 2 large glasses with plenty of crushed ice and strain over the coffee to get rid of the grounds.


ElderFlower and Mint Cooler 2tbsp elderflower cordial 4 sprigs fresh mint 300ml apple juice Whizz everything together in a liquidiser or with a hand blender. Chill in the fridge for at least an hour.


Strain through a fine sieve before serving to get rid of the tiny bits of mint leaves.


For an alcoholic twist, add a glass of prosecco at the end to keep the bubbles.


Gazpacho


This is the classic chilled soup from Spain – full of flavour and really refreshing; in fact a great lunch replacement at the peak of the sun’s heat. If you’ve been in inland southern Spain in July and August, you’ll know they know a thing or two about keeping cool....If you have some very ripe melon, add a wedge of that for a fruity note or a dash of fino sherry makes a lovely pre-dinner drink.


4 very ripe tomatoes, roughly chopped 1 clove garlic, peeled 10cm piece cucumber, peeled, deseeded and chopped 3tbsp olive oil 1tbsp red wine vinegar Salt and pepper


Whizz everything up in a food processor or liquidiser with 50ml cold water until smooth and chill in the fridge until really cold. Serve in individual glasses as a starter to a meal or just as a drink.
