THERE is nothing more quintessentially English than the ritual and ceremony of serving afternoon tea, and recently this historic pastime seems to be enjoying an enthusiastic revival. It is believed that the credit


for the custom of serving afternoon tea goes to Anna, the 7th Duchess of Bedford in the early 19th century. The usual habit of serving dinner as late as 9pm left the duchess hungry in the late afternoon, so she would order tea, bread and butter and cakes to be served in her room. This was thought to be an excellent idea, the habit caught on and afternoon tea was born. Before long, it was a common occurrence for members of fashionable society to be sipping tea and nibbling sandwiches in the middle of the afternoon. These days many hotels, tearooms and restaurants serve


afternoon tea. The tea traditionally starts with savoury finger sized smoked salmon, cucumber or egg and mustard and cress sandwiches, followed by scones with jam and cream and finally a selection of cakes. The tea is traditionally served from heavy ornate silver teapots into delicate bone china cups. So why not take a break from today's hectic lifestyle, relax and indulge in a little bit of this Great British tradition?
