In partnership with Helios MPPD, Alitalia has teamed up with long-standing Italian lifestyle brand ‘Culti’ for its Ottima Business (medium haul) chinaware and is aiming to promote ‘Made in Italy’ through several product ranges and all classes. OBH: What was your brief from Virgin Australia for the new tableware design and how did you come to the final decision and why? LM: To create a stylish and elegant tableware range that was functional for the airline environment. I chose simple white, coupe- shaped plates which look like a beautiful base for all dishes; from plated meat and vegetables, to dishes with sauce and braising liquids. The bowl selection provides three options of interesting round flared-sides which look great from above and work within the table space. Classic white makes the food the star, and also accentuates Virgin’s beautiful new corporate colours.
What does it mean to you to be working with Virgin Australia – and how do you adapt your meals for the air? I have had a strong affinity with the Virgin brand from an early association with Sir Richard Branson. As a chef committed to supporting all things Australian, my menus are ideally sorted to the new Virgin Australian brand. My food is based on technique but is also simple and tasty in style, which works well for airline food. Chefs who over-complicate things on a plane, rarely get it right. I had to understand the parameters within which the airline has to work - from the supply chain, to the catering centres, refrigeration and the onboard cooking and plating. My dishes work really well in the air.
