Feature: Tableware

distinctive

The tableware trend is clean and simple, running parallel with a move towards serving quality, seasonal, home-grown, fine foods. Jo Austin reports

A

major tableware contract now reaching completion is with Delta Air Lines for its

new premium cabin serviceware. The project included the design and development of the meal and serving trays, linens, glassware and salt and pepper set and has been a year-long collaboration between the onboard services team at Delta and Watermark. Said Peter Wilander, md, onboard services,

Delta Air Lines: “Our vision was to launch an innovative and contemporary line of premium cabin serviceware that enhanced the dining experience and that functions for all aircraft types, reducing total cost of ownership.” The design of the meal trays started with a moment of inspiration in a retail store, when a Delta staff member noticed a natural wood grain tray in a unique winglet design. From that point, the airline issued a tender asking for suppliers’ interpretations of the trays and designs in keeping with the form and look but

which were functional from both a catering and inflight service standpoint. Delta was also looking for concepts for the textiles, glassware and salt and pepper shakers to complement the aesthetic quality of the tray. The serviceware, in fact, took its inspiration

from some of the top restaurants worldwide. Inspiration was also drawn from international influences, the shelves of niche boutiques and the upcoming trends as seen on mpdclick.com, to create a range in line with Delta’s design brief but that pushed the boundaries of the traditional inflight meal service. Watermark designed an innovative IML (in mould labelling technology) tray composed of a high quality resin plastic base and custom wood grain finish to replace the less durable original wood material. The natural-looking surface has the appearance of real wood, but is machine washable. The tray itself was modified to fit inside Delta’s range of airline
