She continued to investigate the options available and has recently launched a food recycling scheme. This new initiative will mean that all the food waste produced on site will be composted. As well as back-of-house food waste, Shirley has made it as easy as possible for customers to send their food waste for composting. She has placed waste food caddies at all coffee areas where tea bags, fruit cores and skins, and coffee grounds are collected for composting. The food waste is collected by a company that composts it. Shirley has completed the circle by buying back the resulting compost to use on the grounds of the BP offices, which ARAMARK and therefore Shirley are responsible for maintaining.


Shirley was instrumental and worked consistently for a year to develop new processes and systems and put in place additional initiatives to ensure that ARAMARK at BP North Sea HQ achieved certification in ISO 9001: 2008 and ISO 14001:2004. This was achieved in 2009. ARAMARK’s employees are now very much more aware that the environment is their responsibility and that the ways of working form part of the company’s commitment to ISO14001, where continuous improvement is the focus.


TARGETS


Each year, Shirley works with BP to agree a theme and targets for waste for the next twelve months. In 2010, the theme is “Don’t let 2010 go to waste”. The targets for 2010 are for 50% of waste to be recycled, as well as reducing paper use by a further 8%.


The team has been recording recycling figures for ten years. In 2006 and 2007, the average recycling figures showed that approximately 30% of total waste was recycled. Shirley and the team are currently recycling 75% of all waste so are significantly exceeding the targets set. This year has shown the largest increase due to the introduction of food waste recycling.


In all, from January to July 2010, Shirley and her team have recycled 119 tonnes of waste.


As well as demonstrating waste reduction and recycling measurements, Shirley has been able to save


approximately £200 per month on landfill tax due to the food recycling initiative.


There is also a reduction in uplifts of waste, which not only save money but also reduce the carbon footprint at the headquarters.


While Shirley and BP are not currently able to give an exact figure on the reduced carbon footprint, the work is in progress to measure it.


PARTNERS


As well as partnering with the client organisation to set targets, Shirley actively engages her ARAMARK colleagues and BP customers. For example, every year Shirley organises an Environmental Day. She invites key stakeholders to participate and present, including the waste management and food recycling companies and other agencies that are involved in reducing, re-using and recycling. All BP staff attend the day, which Shirley aims to make as fun as possible.


She also works with her external suppliers to give her support to them. She has worked with the company that manages the food waste recycling and helped them by taking part in a promotional video.


Shirley is always keen to share best practice and frequently has companies visiting to see the recycling operations that she has put in place. Wherever possible she will offer help and advice.


COMMUNICATIONS


Shirley has played a critical part in raising both the understanding and awareness of colleagues in their respective work areas, specifically relating to environmental sustainability issues, waste management and recycling. She is also responsible for cascading key environmental messages throughout the operation. Her aim is to increase environmental awareness in the workplace and encourage both ARAMARK and BP employees to adopt more environmentally friendly forms of behaviour, as well as encouraging them to be more sustainable at home and in their community. This action supports ARAMARK’s corporate environmental policy and environmental performance targets.


Shirley is responsible for ensuring that all contracted employees go through an environmental awareness programme. At the start of each year when the targets


have been agreed with BP, she puts together a tool box talk, which she delivers to each team member.


She also issues a card of the


environmental targets and requirements of their particular job to each employee as a constant reminder of what ARAMARK and BP are trying to achieve at the offices. Posters highlighting the key messages are displayed on team noticeboards. The ARAMARK team goes through environment and recycling training every January, with each team member being issued with an Environmental Awareness card. See an example of the 2010 card as Fig. 1. As Shirley goes about her daily job, she is always on the lookout for people recycling. To reward their efforts, she gives them a voucher for a free coffee at the ARAMARK restaurant. Anyone she sees that does not recycle and therefore whose actions do not support the waste reduction initiative are coached by Shirley to change their behaviour.


All ARAMARK staff have an annual refresher on the ARAMARK Green Thread programme, the company’s environmental campaign, which Shirley also shares with other service providers. Annually she runs a five-day Waste Awareness campaign throughout the office complex for all staff.


Already looking ahead to the next challenge, Shirley will be working with the Marine Stewardship Council towards Chain of Custody certification
