PUT ON A SHOW
Lincat's Seal range of merchandisers can be suited together
If you've got it, flaunt it! Heated and chilled display cabinets are a great way to encourage sales, says James Pringle
Why just keep your hot food hot and your sandwiches, desserts and soft drinks cold when they could be doing a selling job for you in a heated or chilled display cabinet? People can be lazy about reading the shortest of menus, but if they actually see food and drink that they would like, what could be simpler?
If food is attractively presented in a merchandiser, it will sell.
Effective lighting is important, but food will only look good - and be safe - if it's maintained in optimum condition. Verco's Colin Jones says: "Merchandising of chilled food and drink is the key to maximising profit in fast-moving coffee shop environments. That means maximum use of valuable floorspace, high visibility for the product and constant temperatures to maintain quality and hygiene." Verco integral, open-chill cabinets increase merchandising space and provide easy access to the produce. Three 'Midi' versions have joined the open-chill Cambridge line-up, with the latest rotary scroll compressors and a low-front design of just 410mm. Cambridge combines the benefits of remote refrigeration such as larger capacities and quiet operation with the flexibility of integral installations. merchandisers. "There's one for every requirement and they enhance food display and offer superb durability and reliability," says Lincat marketing and export director Nick McDonald. "It's generally easier to display hot food than cold, but this presents its own challenges - especially the need to prevent food from drying out while maintaining a sufficiently high temperature to ensure food safety. “Seal heated merchandisers ensure food is held at a minimum of 72 deg.C - well in excess of current food safety requirements - and a humidity feature keeps it moist."
