SPAGHETTI SQUASH Of the hundred or more squash varieties available, from acorn to zucchini, perhaps the most elusive is the spaghetti squash which has a mythical status among low-GI dieters. As its name suggests, the fibrous texture of this gourd makes it an acceptable low-calorie substitute for pasta, and followers of low-carb and fasting diets have hailed it as a miracle ingredient. It is rumoured that the scarcity and high nutritional value of spaghetti squash has led to an underground market in the fruit, with dieters swapping sources online. Uncut and uncooked, spaghetti squash can keep for up to 2 weeks! Once cooked, scoop out the centre with a fork, season with salt and pepper and drizzle some oil, and if you need to save some you can store it in the fridge in an airtight container for 3 to 5 days.


KNOW YOUR CUTS


LAMB NECK FILLET


A relatively inexpensive cut, neck fillet is most often used in slow cooking


for braises, stews,


curries and tagines. If you trim the excess fat from the outside, it can also be cut


up for threading onto kebabs or used as a mini roast: brown it first in a frying pan, then give it 9-10 minutes in the oven at 220°C Or try it butterflied and grilled in


a hot griddle pan like a steak. Each fillet should feed 1-2 people.


BOOZE FREE BEER


Many well known breweries are now investing in delivering very tasty alcohol free beers


IT'S A THING...ZABUTON This incredibly tender, flavourful steak comes from the chuck roll,


between the shoulder blade, ribs and backbone of the cow. Named after the Japanese cushion for sitting on, zabuton often goes into burgers, but properly butchered and prepared, it's as soft as fillet steak and as beefy tasting as rump.


COOK'S TIP


Soft herbs slightly passed their best? Whizz with olive oil and freeze in an ice cube tray for instant flavour packed fixes to finish soups, steaks and stir fries.

THE CLAIM It's best to whisk egg whites in a copper bowl THE VERDICT TRUE The action of whisking causes copper ions from the bowl to bind with a protein in the egg whites. This makes them more stable when beaten, so it's harder to over-whip the whites and they're less likely to turn grainy or split. The drawback is that copper bowls are expensive.
