It preferentially takes energy from recently digested carbohydrates (glucose); when this is metabolised, it switches to its glycogen, a sugar-store in the liver and muscles; and when this is depleted, typically after three to four days of dieting, it shifts metabolic gear and turns to its main energy store, namely fat deposits. and it’s how all diets work. However, there are some differences with a ketogenic VLCD. Firstly, because it’s so low in carbohydrates, fat stores are metabolised at a very high rate of around a stone a month, which is as fast as the weight loss resulting from gastric banding and far quicker than any ordinary, fully-nutritious dietary approach. Secondly, because the brain can’t metabolise


fat for fuel, some of that stored fat is processed by the liver into ketones, which become the brain’s main energy source. This is where the terms ‘ketosis’ and ‘ketogenic’ come from.
