Procedure: Heat the water of phase A1 at 70°C and disperse Structure® XL for 15 minutes under high shear. Add premix A2 into A1 under moderate shear for 10 minutes and check that everything is homogeneous. Maintain the temperature at 70°C. Heat the oil phase B at 70°C. Check that everything is homogeneous. Proceed with the emulsion of phase B into phase A (A1+A2) at 70°C, under moderate shear, and then increase to high shear (2500 rpm) for 10 minutes. Cool down under moderate shear and below 35°C add the phase C, D and E one by one. Add finally the pearls of phase F and mix slowly for 10 minutes. Finish to cool down until reaching 25°C. Check the pH and adjust if necessary. Properties: pH: 5.6 ± 0.3 Viscosity Brookfield RV (spindle A, speed 5): approx. 11500 mPa.s after 24h
