INGREDIENTS 3 red onions, thinly sliced 4 cloves garlic, thinly sliced Pinch of dried chilli flakes 1kg peeled, deseeded and chopped tomatoes (or use equivalent tinned chopped tomatoes)


Good amount of olive oil 1 small bunch of fresh basil 400g loaf of uncut bread, crust off and tore into chunks

METHOD


Slowly sweat the onions, garlic and chilli in olive oil until soft. Season with salt and pepper. Add the chopped tomatoes and simmer for 10 mins, stirring to bring it together. Then add the chunky bread, fresh basil and stir gently.


Check seasoning and possibly add a touch of sugar if the tomatoes are too tart. Dish the soup up and serve with generous parmesan shavings and a final drizzle of oil.
