grandmother’s love of all things wild and his dislike for modern intensive farming. He sources all our sea vegetables such as sea lettuce, Cornish kombu, sugar kelp and sea spaghetti and our wild food including wild garlic, rock samphire, sea rosemary, salty fingers, wild mustard and many more and, of course, our favourite as chefs, the mighty truffle!


Does that mean The Angel is very expensive? No, we have priced our menu quite aggressively – our dishes are competitively priced from £16.95 for pork belly to £23 for a lamb dish. The wine list starts from £17.95 and we have introduced a lunchtime set menu of three courses and coffee for just £25.


Tell us about the team running The Angel. Head Chef is Jody Shaw – classically trained, he is passionate about working with fresh seasonal produce with a


classic but unpretentious touch. Adam Butler is Senior Sous Chef and worked with Jody at South Sands Hotel. He’s a previous Head Chef at River Cottage. Out total kitchen staff of 4 worked together in London and most recently at South Sands Hotel before decamping en bloc to us. We’ve a very experienced front of house staff; all have experienced the high standards and delivery of service that we wish to create at The Angel.


What is your own background? I’m from a farming and equine background – I competed internationally at eventing and am a qualified riding instructor. I worked in sales and marketing in the City before opening my own successful pub and restaurant near Tunbridge Wells in Kent.


The Angel is open 5 days a week (closed Monday and Tuesday).


Lunch 12noon – 3pm


(traditional Sunday lunch now at Sunday lunchtime) Dnner from 6pm


The Angel welcomes children aged 7 and over but do not offer a children’s menu.
