Can It Happen Again?


All of us who live in this part of Oklahoma and Texas know that weather conditions are unpredictable. Although we certainly hope that no other ice storms impact Texhoma this year, the reality is that they might. This issue of SWRE News goes to print in Mid-January. Icy conditions of some kind are probable in our area through late February or early March. We can hope that there is no Goliath repeat, but as members of the electric co-op, we have to be prepared.


What’s Cookin’ in the SWRE Kitchen Southwest Caesar Salad


4 skinless, boneless chicken breasts


1 (1.27 oz) packet dry fajita seasoning 1 cup mayonnaise 2/3 cup grated Parmesan cheese


1/2 cup sour cream 4 green onions, chopped 1 tablespoon chopped fresh parsley


Directions


1. Sprinkle chicken breasts with fajita seasoning and grill for about four minutes on each side, or until no longer pink and juices run clear. Allow to cool, then slice into bite-size strips. 2. Prepare the dressing. In a blender or food processor, combine mayonnaise, grated Parmesan cheese, sour cream, green onions, parsley, Dijon mustard, chipotle pepper, garlic, and Worcestershire sause. Blend until smooth.


3. Place romaine lettuce in a large bowl and top with croutons, shredded parmesan, and red, yellow, and orange pepper rings. Arrange chicken on top and then pour on the dressing as needed. Note: The dressing is spicy.


VARIATIONS: Consider adding black beans, Mexican corn, and/or chopped tomatoes to the salad.

1-1/2 teaspoons minced garlic


Worcestershire sauce 8 cups romaine lettuce, torn into bite-size pieces


1/2 cup garlic flavored croutons


1/4 cup shredded Parmesan cheese 1 red bell pepper, sliced into thin rings 1 yellow bell pepper, sliced into thin rings 1 orange bell pepper, sliced into thin rings
