Good broiler cooks in fancy steak houses know how to cook a steak to order. They cannot cut into a steak to see how red or pink it is inside. Instead they use pressure to tell how done a steak is. They also know how diff erent cuts of meat respond to pressure when rare, medium rare, or well done. If you are a beginning cook, don't worry. With prac ce you will become an expert, too.
1. Season the meat with Daddy Hinkle's and let it warm up to room temperature.
2. With a spatula press down on the meat and feel how the raw meat feels when you apply some pressure. It will feel very so or even mushy. That is your star ng point of reference--raw.
3. Put the meat on the grill and start the cooking process. As it cooks, it will feel fi rmer and fi rmer. Remember how it felt when raw. 4. If you have a meat thermometer, you can check the internal temp and feel how so or fi rm the steak is with each change of temperature. 5. Prac ce with each cut of meat un l you can judge the doneness of the steak. Soon you will be an expert.
