BECCI HIGHLIGHTS HER FAVOURITE RECIPES IN THIS ISSUE…


You wouldn’t even know there was such a thing as a Hungry Gap if this issue of the magazine is anything to go by. The fresh fi rst season lamb is on its way and there is plenty of seafood still in season, not to mention the


rhubarb and fi rst purple sprouting broccoli. As always, it was a tough decision to whittle it down to three.


To start PAGE 12 – OYSTERS AU GRATIN


Last year saw my love of oysters grow, heightened by the fact that they are actually much more aff ordable than you might think. One thing I haven’t done though, is cook them myself at home. Sure, I’ve shucked a few and knocked them back (chewing of course), but I haven’t applied heat. This


recipe sounds delicious, but I might wait until asparagus is in season to give it a go.

PAGE 32 – LAMB CHOPS WITH NETTLE PESTO, QUINOA, SPRING HERB & LEMON SALAD


This dish has got spring written all over it. Fresh and zingy nettle pesto, ‘courgetti’ and the very fi rst lamb chops of the season. I really can’t wait to make it.


For pud PAGE 28 – RHUBARB AND PISTACHIO BAKLAVA


Rhubarb has to be one of my favourite fruits (yes I know it’s offi cially a vegetable). Pair with pistachios in a sticky sweet baklava and you have got a pretty special way to end a meal.
