❤ 1 tbsp olive oil for frying ❤ 2 white onions, fi nely diced ❤ 2 sticks of celery, fi nely sliced


❤ 2 cloves of crushed garlic ❤ 2 sprigs of rosemary ❤ 400g of potatoes, peeled and chopped into 1inch cubes


❤ 500g of smoked haddock ❤ A handful of small prawns ❤ 600ml of double cream ❤ 200ml of fi sh stock ❤ Salt and pepper for seasoning


1 Part boil the potatoes until slightly soft.


2 In a large pan heat a table spoon of olive oil and fry the onions, celery, garlic and rose- mary until they start to brown.


3 Add the cream and fi sh stock and allow to come to the boil.


4 Add the haddock and prawns, do not stir too often as the fi sh will break up too much.


5 Add the cooked potatoes and bring up to a simmer.


6 Season with salt and pepper to taste.
