Berbere Beef Stew
Ingredients: 2 medium onions 1/4 cup butter 2 cans of chopped tomatoes 1/4 cup dry red wine 1 1/2 lbs stewing steak 2 tbls Flavourmagic Berbere spice blend selection of seasonal vegetables: carrots, parsnip, butternut squash. peas etc.

In a food processor, pulse onions until very fi nely dices (almost pureed). Melt butter over a medium-high heat, add onions and stir until browned.
Add the spice and cook out for 2-3mins. Add tomatoes, wine, beef : bring to a simmer, then cover & reduce the heat stirring occasionally. With about 40mins to go add the vegetables to the pan, keep cooking until the beef is vert tender & add salt to taste. (about 2 1/2 hours)
