• 3 medium fresh peaches, peeled and cubed • 2 cups cubed cooked chicken breast • 1 medium cucumber, seeded and chopped • 3 tablespoons finely chopped red onion
Mint Vinaigrette
• cup white wine vinegar1⁄4 1 cup sugar⁄3
• 1 tablespoon lemon juice •
• cup minced fresh mint1⁄4 • teaspoon salt1⁄4
• teaspoon pepper1⁄8
• 4 lettuce leaves Directions
In a large bowl, combine the peaches, chicken, cucumber and onion; set aside. In a blender, combine the vinegar, lemon juice, sugar, mint, salt and pepper; cover and process until smooth. Drizzle over chicken mixture; toss to coat. Cover and refrigerate until chilled. Use a slotted spoon to serve on lettuce-lined plates.

• 1 tablespoon
ounce apricot brandy
• 1 cup frozen peaches •
ounce light rum
• 1 ounce peach schnapps •
superfine sugar
• 1 cup crushed ice Directions
Combine the peaches, lime juice, rum, schnapps, brandy, vanilla, and sugar in the blender until smooth. Slowly add the ice with the blender running and process until smooth.
Serve in a chilled glass. Makes 1 serving
