believe in eating a variety of good food to symbolize abundance… and this tasty T ai appetizer delivers a glorious medley of fl avors and ingredients all in one little serving! “Mien Kham” translates to mean “eating many things in one bite” and makes an auspicious starter for all lunch or dinner occasions! In just one small little leaf-cup, you’ll savour all fi ve fl avors of life: bitter (only very slight from the bettel leaf and skin of the lime), sweet (sauce), sour (lime), salty (sauce) and spicy (chilies). This super easy-to-make sambal is simply to die for and it is the base of all my mother’s amazing curries and nasi lemak dishes… so I always make more than I need as I can use it in so many ways! You can even enjoy the sambal paste on its own, as a delicious topping for cucumbers, boiled eggs, cream crackers and lettuce! In this recipe, I’ve taken mom’s sambal and added a few more ingredients to create a heavenly Mien Kham sauce that will blend all the fl avours beautifully! If you live overseas and are having trouble fi nding Wild Bettel leaves, then substitute with lettuce cups as it’s just as good! The best part about this dish is that you can


make the sauce and prepare all the chopped ingredients ahead of time, and serve it when guests have arrived!”
