Chilling with Khenpo Delek Rinponche in Taichung.
This little hotpot place in central Taichung city was one of the oldest and most famous! The soup had a delicious medicinal herb flavour and the sauces were out of this world!
Wow it was such an amazingly easy AND tasty way to eat myself to good health! I can completely skip the carbs and focus exclusively on the protein via the thinly-sliced meats – beef, lamb, pork – and the heavenly tasting vegetables Taichung is so famous for! I had to explain to Rinpoche that belonging as I did to the O-type bloodgroup, I simply had to have meat in my diet, that soy, tofu and dairy was not good for me, so I simply have to depend on eating the carcasses of animals! His response was classic Delek
Rinpoche. He nodded and responded, “like that Ah? T en just don’t eat live meat...” We had hot pot every meal, and in the end, he described our time in Taichung as Hot Pot Retreat! Indeed, I have to say all of us felt like we were on a gourmet high enjoying the fresh meats and vegetables of Taiwan!
And lest I forget to mention,
For lunch we visited a hotpot place where everyone had their very own pot!
For two nights in a row we went to this hotpot restaurant called “Hero Tan” as their spicy Szechuan “mallard” soup quickly became Wan Jin’s favourite! The vegetables in Taichung have a very sweet natural flavour as Rinpoche tells us it’s specially grown in the Taiwan mountains.

In any case, Taiwan is a country where every kind of medical help is easily at hand. No worries there. What convinced me in the end was that I knew deep inside me that things would somehow be fi ne. My husband would be with me and it would be wonderful to catch up with Rinpoche and Kunchuk la. And as soon as we arrived at Taipei
airport, I knew it was right to have come, although in the end I decided to give the Spa with the water jets treatment a miss. Instead, I discovered the wonderful hot pot restaurants of

Taichung, and in so doing devised the perfect diabetic menu for myself. T rough the four days we spent in Taichung, we went to some pretty swell hot pot places, each with their specialty soups that ranged from Sichuanese hot oil mallard soups to the herbal and pumpkin recipes.
Taichung is a very modern and special city. T e roads are wide and clean with smooth fl owing traffi c. Wi-Fi works everywhere and it is usually free, no passwords needed! For some reason, I find this very liberating. T e telephone 3Gs and 4Gs offer fast-speed connectivity. T e shopping malls are big and clean and the stores are well-stocked. T e fashion collections - clothes, bags and shoes - off er very NEW stuff , although we did not spend serious time on shopping really. However, the one mall we walked into that was near our hotel looked very tempting! And the 30 minutes or so we
