Mom’s Cream of Broccoli Soup

1 can reduced-fat chicken broth 2 tsp. butter


1 can cream of chicken soup ½ c. milk


1 sm – med. carrot, grated ¼ tsp. minced garlic (opt.)


½ tsp. each tarragon, rosemary and marjoram


DIRECTIONS


In a medium pot, add chicken broth, water, butter, salt and pepper and bring to boil. Reduce heat to simmer. Add onion, garlic and carrots and simmer for about 5 minutes then add broccoli. Simmer until carrots are crisp tender. Add cream of chicken soup and stir until dissolved. Mix milk and flour until flour dissolved. Add milk and Velveeta to broccoli mixture and simmer until cheese is melted and soup is slightly thickened.


Grandma’s Special Eggs

INGREDIENTS 1 slice of bread


Butter 1 egg


DIRECTIONS


Take a slice of bread and cut the center out. Make sure crust is left altogether to make a square. Using the crust, butter each side and place on a hot griddle. Crack 1 egg to fill the area that was cut out. Salt and pepper to taste and let cook for 1 minute or so. Flip and cook until egg is at desired hardness. Place oven setting to boil. Take center of bread butter 1 side. Cover with sugar and cinnamon. Broil until toast is golden. Center can also be toasted on griddle to make plain toast. Hint: Cheese can be cut to make a smiley face on top of the egg.

Salt and pepper to taste 1 can water


1 (8-oz) box chopped broccoli, frozen


½ c. Velveeta cheese, cubed 1T flour


1 small onion or bunch of green onions
