Savory Watermelon Salad with Watermelon Vinaigrette Yields 1 1/2 cups vinaigrette


For the vinaigrette:


3 1 shallot, peeled (or 2 table- spoons chopped sweet onion) 3 1 cup cubed seedless watermelon 3 1 lime, juiced 3 1 tablespoon honey 3 ½ cup olive oil


3 Kosher salt and ground black pepper


For the salad: 3 Mixed salad greens


3 Seedless watermelon, cut into bite-size cubes

To make the vinaigrette, place the shallots, watermelon, lime juice and honey in a food processor and process until smooth. Pulse the food processor while slowly driz- zling in the olive oil. Add salt and pepper to taste. To assemble the salad, place the greens in a serving bowl or individual dishes. Top with watermelon cubes, cucumber slices and crumbled feta cheese. Dress just before serving.
