How to Grow Beans


Purple snap beans


Gardeners can choose from many types of beans, the most common of which are described below. Except for the soybean (from eastern Asia) and the fava bean (from the Mediterranean region), beans are New World plants belonging to the genus Phaseolus. Most are frost- sensitive heat lovers and are easy to grow from seed. All are annuals except for scarlet runner bean, which is a peren- nial grown as an annual. Bean fl owers are edible. For more vigorous beans, buy seeds inoculated with Rhizo- bium bacteria, which helps the plants fi x nitrogen from the air and store it in their roots. Or buy the inoculant from a nurs- ery or mail-order seed supplier and treat the seeds yourself.


Dry bean. ‘Pinto’, ‘Red Kid- ney’, and ‘White Marrowfat’ belong to this group. Most are grown until pods turn dry or begin to shatter, but some varie- ties are best when harvested at the green shelling stage (“shelly beans”) and cooked like green limas. These include the fl ageo- let bean (a French favorite) and ‘French Horticultural Bean’, also known as ‘October Bean’. Heir- looms such as ‘Aztec Dwarf White’, ‘Mitla White’, and ‘New Mexico Appaloosa’ were used by Native Americans of the Southwest and are very well adapted to that region. Dry


PLANTING Sow seeds as soon as soil is warm. Plant in loose, open soil so that the heavy seed leaves can push their way through; soil needn’t be particularly deep, since beans have shallow roots. Plant seeds 1 in. deep and 1–3 in. apart, allowing 2–3 ft. between rows of all kinds of bush beans. Pole beans need something to climb, and this can be provided in one of the following ways: (1) Set three or four 8-ft. poles in the ground and tie them together at the top in tepee fashion; plant four seeds around the base of each pole, thinning to two plants each. (2) Set single poles 3–4 ft. apart and sow six or eight beans around each, thinning to three or four strongest seedlings. (3) Insert poles 1–2 ft. apart in rows and sow seeds as you would bush beans. (4) Sow seeds along a sunny wall, fence, or trellis, and train vines on a web of light string supported by wire or heavy twine.


WATERING & FEEDING Moisten soil thoroughly before planting beans, then do not water again until seedlings have emerged. Once growth starts, keep soil moist. Fertilize soil after plants are in active growth and again when pods start to form.


PESTS Control aphids, cucumber beetles, spider mites, or whitefl ies if they appear. Row covers help with insect control on bush beans; hosing down helps with aphids; use yellow sticky traps for whitefl ies.


beans take 70 to 80 days to get to the shelly bean stage, then another 2 to 3 weeks to reach true dry bean stage. Let pods remain on the bush until they turn dry or begin to shat- ter; then remove beans from the pods, dry the beans, and


store them to soak and cook later as needed.


Fava bean (broad bean, horse bean). This is a cool- season bean (actually a giant vetch, Vicia faba), best known and grown in coastal climates. Cook and eat immature pods like edible-pod peas; prepare immature and mature seeds in same way as green or dry limas. Note that a very few peo- ple (mainly of Mediterranean ancestry) have an enzyme defi - ciency that can cause severe reactions to the beans and even the pollen. Fava beans require different care than the other types described here. In cold-winter areas, plant them as early in spring as soil can be worked; in mild climates, plant in fall for harvest in late winter or early spring. Beans mature in 120 to 150 days. Space rows 11⁄2–21⁄2 ft. apart. Sow seeds 1 in. deep, 4–5 in. apart; thin to 8–10 in. apart. Plants produce bushy growth to 2–4 ft. high.


Lima bean. Like snap beans (which they resemble), lima beans come in either bush or vine (pole) form. They develop more slowly than snap beans— bush types need 65 to 75 days from planting to harvest, pole kinds 78 to 95 days—and do not produce as reliably in very hot weather. Before being cooked, they have to be shelled, a tedious chore but worth it if you like fresh limas.


Scarlet runner bean. Peren- nial twining vine grown as annual. Showy and ornamental, with slender clusters of vivid scarlet fl owers and bright green leaves divided into three round- ish leafl ets. Use it to cover fences and arbors; it provides quick shade on porches. Pink- and white- fl owered varieties exist. Flowers are followed by fl attened, very dark green pods that are edible and tasty when young but toughen as they reach full size. Beans are ready in 50 to 80 days, depending on variety. Beans from older pods can be shelled and cooked like green limas.


Snap bean (string bean, green bean). The most widely planted bean type. Tender, fl eshy pods, not stringy; may be


green, yellow (wax beans), or purple (these turn green when cooked). Plants grow as self-supporting bushes (bush beans) or as climbing vines (pole beans). Bush types bear earlier, but vines are more pro- ductive. Plants look like scarlet runner bean, but their white or purple fl owers are not showy. Beans are ready in 50 to 80 days, depending on variety. Pick every 3 to 5 days; if pods mature, plants will stop bearing.


Soybean, edamame. Grown in Asia for millennia, Glycine max is a relatively recent arrival in American gardens. Plants grow like bush snap beans, pro- ducing short, fuzzy pods. The beans themselves are very high in protein. Plants thrive in warm, humid climates but struggle in dry ones. “Edamame” can refer to shelled green soybeans, to a dish made from cooked whole baby soybeans, or to soybeans generally (the Japanese word means “beans on a branch”).
