RECIPE OF THE MONTH PUMPKIN AND BROCCOLI RED CURRY


As the peak season fades away with the sun, we are left grasping at the memories of summer barbecues, frozen treats and al fresco delights. Rather than mourning the passing of everyone’s favourite season, let us embrace September with the ingredient that embodies autumn and Cinderella’s preferred choice of transport: the pumpkin. It’s about time we had a bit of veg after all that barbecue sauce...


INGREDIENTS:


• 1 tbsp sunflower oil • 200g broccoli • 150g baby corn, halved • 1 bunch of spring onions, sliced • 1 onion, chopped • 3cm piece of ginger • 2 cloves of garlic, peeled and finely chopped • 1 bunch of coriander, chopped • Juice from 1 lime • 1 medium pumpkin or butter- nut squash, peeled and cut • 70g of red curry paste • 400g tin of coconut milk • Thai rice


Heat the oil in a frying pan then gently saute the onion, ginger and garlic until it has softened. Mix in the curry paste and cook for 1 minute. Stir in the pumpkin/butternut squash and add the coco- nut milk with 200ml of water. Once mixed, bring to the simmer and cook uncovered for 15 minutes until the pumpkin/butternut squash is tender. Add the broccoli, baby corn and spring onions to the curry and cook until the veg is as soft as you like. To finish, stir in the lime juice and coriander before serving with rice. Enjoy it!

However, whether you are a veggie or a meat lover, Hummus Bros have come up with a delicious menu consisting of only fresh produce and all centering around chick peas, i.e. hummus!


Served up with warm pita bread and a spoonful of hummus, you get to fill your plate with your choice of salad, chicken, chunky beef and mushrooms, with prices depending on the size of your pita. With a selection of breads, Hummus Bros is just like Subway but healthier! Prices range from £4 to £5 while sides are a couple of quid; try the barbecued aubergine, and check out The Brothers’ restaurants at Holborn and St. Paul’s too.

The wonderfully charming Sable D’or is reminiscent of 19th century Paris, from the lingering notes of the accordion hovering over the chitter-chatter of the locals to the light and warming menu. Dishes range from baguettes and crepes to pastries and cakes all at 50p each, the delicious and colourful macaroons are perfect for a midday treat.


Lasagna is break up food heaven. It has all the ingredients that the latest diet craze is forbidding you from eating, and it is definitely not the best way to begin the standard break up diet, but pasta, red meat and mountains of various cheeses have never tasted better. Good meals seem not to last but lasagna is just layers upon


layer of perfection. Not only is it filling, but if your waterfall of tears soak your first helping there is always a whole casserole dish left.


If that doesn’t fill the hole left by your lost love, a decent sized portion of Ben and Jerry’s is sure to finish off what you have started.
