FLORAL DESIGN II - INTRODUCTION TO FLORAL DESIGN Location: Room 822 at Escondido Education Center 3 Tuesdays/Thursdays: February 21 – March 8, 2012 7pm – 9:30pm Instructor: Joel Garlejo

Jobs for floral designers are expected to grow through 2014, according to government economists. In this introductory course to the world of professional floral design, you’ll learn the mechanics needed to make gorgeous arrangements, such as wire and taping, size and proportions, vase arrangements and working with floral foam. This is a hands-on approach to basic floral designs, and will cover floral care and handling as well as how and where to buy floral products. Arrangements made in class are standard vase arrange- ments in various sizes; color and texture arrangements in floral foam; arrangements with shape and balance; and one-side and all-around arrange- ments. Class tuition includes materials fee for all consumables; students will be responsible for bringing vases/containers. A 50% cancellation fee will be assessed for classes cancelled less than 7 days in advance.
FLORAL DESIGN III - UNIQUE DESIGNS Location: Room 822 at Escondido Education Center
3 Tuesdays/Thursdays: March 13 – April 3, 2012 (no class 3/20 or 3/22)

Prerequisite Floral Design I Prerequisite will be waived only with instructor approval. Joel Garlejo will continue his in-depth instruction about unique designs and how they are made. He will help bring out your creativity to create that “wow” factor in all of your arrangements. Working with different, unique materials, you will learn to create other floral retail products such as dish gardens, spring wreaths, and gift baskets--and how to price them. Class tuition includes materials fee for all consumables; students will be responsible for bringing vases/containers. A 50% cancellation fee will be assessed for classes cancelled less than 7 days in advance.
FLORAL DESIGN IV - WEDDING/SYMPATHY ARRANGEMENTS Location: Room 822 at Escondido Education Center 3 Tuesdays/Thursdays: April 10 – 26, 2012 Instructor: Joel Garlejo

Prerequisite Floral Design I & II Prerequisite will be waived only with instructor approval. Wedding and sympathy floral arrangements are a big part of the floral industry. In the first half of this series, you will learn how to construct all the necessary pieces for a wedding, from boutonnieres and corsages to bridal bouquets. With all the new trends and materials, you’ll create fun, new, modern wedding decorations. The last half of the series will be devoted to sympathy pieces such as standing sprays in cage floral foam and easels, casket spray, and offertory wreaths. This class also includes learning how to do the necessary consultations with clients and their coor- dinators. Class tuition includes materials fee for all consumables; students will be responsible for bringing vases/containers. A 50% cancellation fee will be assessed for classes cancelled less than 7 days in advance.

DANCE
COUNTRY LINE DANCING Location: Room 704 at Escondido Education Center

Come on out and click your heels and stomp your feet! A fun, energizing class with basic line dance routines dancing to country and contemporary music. Great for beginning line dancers. Health benefits include toning, flexibility, muscle strength and cardiovascular fitness. Instructor has been teaching fitness-dance classes since 1981 and line dancing for 6 years.

Where do your eggs come from? If you’re inter- ested in raising backyard chickens and don’t know where to start - this is the class for you. With just a little space, and a little work, you can enjoy farm fresh eggs and other benefits of hobby farming with chickens. Many people are falling in love with chickens - you could be next! A $5 materials fee (cash only) will be collected in class.
BEE-GINNING BEEKEEPING Location: Room 701 at Escondido Education Center 2 Saturdays: February 11 & 18, 2012 Instructor: Lori Dekker

Do you want to produce your own honey? Are you worried about the declining bee population? Taught by a local beekeeper, this class will give you the basics to get started in beekeeping as a hobby or you may wish to explore beekeeping as a career. Topics covered will include: Importance of bees, What to expect as a beekeeper - cost, time com- mitment, and stings, Tools and protective gear, Legal requirements, Environ- ment requirements, How to set up a hive, Basic bee biology, Africanized and other “races” of bees, “Organic” vs. “Non-Organic” beekeeping. After the first session there will be optional time provided for building your first hive (sans bees!), and learning about protective gear.
