If you want to learn how the Ace of Cakes or Cake Boss design such cute fondant cakes, this is the class for you. You will “Wow” your friends and family with your new skills. Learn how to properly ice and stack a cake, how to pipe with icing, create flowers, apply and use fondant. A supply list will be distributed at first class. A $30 materi- als fee (cash only) will be collected at first class. This class is required before taking the Professional Cake Decorating Certificate series.

The smell of fresh bread has no rival and yes, it is possible to make great bread at home without a machine! In this hands-on class you will learn the fundamentals of making your own delicious bread products. Each week builds on the previous one, teaching you the how to’s and what not’s of making bread. Before you know it, your kitchen will be filled with fabulous loaves. Week 1: Learn all about yeast (how it works and how it relates to bread making). Week 2: Focaccia (learn both the straight dough and pre dough methods of making this versatile bread). Week 3: Loaf Breads (honey wheat and white dough breads). Week 4: Artisan Bread (two hand-turned artisan breads). Week 5: Braided Breads. Week 6: Pizza Doughs. Classes are hands-on, so please bring an apron, wear closed-toe shoes, bring a cookie sheet with sides and additional containers to take your creations home.

This course is perfect for the home baker and home cake decorator who wants a gourmet flair instead of using cake mixes. You will learn how to bake delicious cakes from scratch, simply, and learn how to make fillings and icings to make your creations look as good as they taste! This class is demonstration only with a weekly at-home baking exercise. A $30 materials fee (cash only) will be collected at the first class. REGISTRATION DEADLINE: February 8, 2012 for first session, and March 28 for second session.

It’s all about knowledge--what foods to buy, when to shop, how to cook meals that rival your local restaurant. Fresh, sustainable foods, which have a flair of your own, are only a few pots away. Join us as we explore the world of cooking and all it has to offer. Each week builds on the previous one, teaching you the how to’s and what not’s of food. Before you know it, you’ll be cooking like a professional chef! Week 1: Kitchen fundamentals (Which pots and pans you need, what kind of a knife you should have, and what your pantry should look like). Week 2: Proteins (Learn the different cooking techniques used and when/how you should use them). Week 3: Vegetables and Fruits (How to incorporate more vegetables and fruit into your daily diet. Learn what is considered “fresh” and what the different cooking techniques are and how to use them). Week 4: Combine your knowledge in this class to create a meal based on what you’ve learned in previous classes. Week 5: Pasta (Learn about different pastas and how to make your own fresh pasta). Week 6: Final cooking challenge--you’ll use your newfound cooking skills to prepare items provided to you by the chef. Classes are hands-on, so please bring an apron, wear closed-toe shoes, and bring containers to take home your leftovers.


JAPANESE CUISINE 101 Location: Room 812 at Escondido Education Center Saturday: February 25, 2012 Instructor: Mineko Moreno

You will learn easy, everyday Japanese cooking and all about the basic ingredients: how to select, store, and use. The recipes you learn will teach you important basic techniques and presenta- tions. Japanese table manners and table settings are included in this class. Menu: Pan-fried Teriyaki Chicken served with Steamed Vegetables, Shrimp and Japanese Cucumber Salad with Ginger Dress- ing, Miso Soup with Tofu and Japanese Long Onion, Japanese Sprouted Brown Rice, and Kabocha Pumpkin Ice Cream. THIS IS A HANDS-ON CLASS LIMITED TO 20 PEOPLE, so sign up early! Your instructor would like to recom- mend that you bring: 1. Any kind of apron. A sharp knife - any size will do. She will also have extra knives in case you do not have one you feel comfortable bring- ing. 3. A favorite non-alcoholic beverage to drink.
