If you ever wonder where to go and what to buy for Japanese cuisine, this is the class for you. Mineko, co-author of “Sushi For Dummies”, will demystify the unfamiliar ingredients as she guides you through the Nijiya Market. You will learn what brand to buy, and how to select fresh vegetables and the Sashimi-Grade seafood for sushi making. This class is a must for those who enjoy making sushi and want to guarantee the quality of what is being served! This is a 2-1/2 hour walking tour, so please wear comfortable shoes and bring a jacket (the inside of Nijiya market is cold). Please meet Mineko in front of the store at 9 am. The Professional Cake Decorating Series encompasses all aspects of cake decorating and is geared toward bakers, teachers, catering professionals, chefs, cake decorators with existing businesses, and those seeking a career in cake decorating. This 12-week certification program will teach you how to design, build, and decorate a wedding cake with royal icing piping/flow in/Lambeth (lattice work)/icing and real flowers/brush embroidery and more. You’ll also cover how to create novelty cakes by learning how to carve; demonstrations of isomalt jewels; chocolate accents; topsy turvy cakes; airbrushing; cover- ing cakes (including squares) and Styrofoam in fondant; and how to create a 6-tier special occasion/wedding cake. Students will be required to attend all meetings in order to receive certification, and must work at home at least 2 to 4 hours in preparation for each class. Students will be responsible for all supplies (list available by contacting rozsweetart@att. net). Prerequisite to participate in this program: you must have taken Cake Design: Basics of Fondant to enroll in this class--or you must demonstrate to Ro that you already know how to bake a cake, have a working knowledge of how to torte, fill, crumb coat, and ice a cake, and how to pipe simple designs and borders. This class will teach you the basic knowledge and techniques of sushi making: ingredients, equipment, how to cook and season perfect sushi rice, rolling and cutting methods, history of sushi, tips for dining out at sushi bars and etiquette. Menu: Sushi Rice including vinegar dressing, Inside-Out California Roll, Grilled Salmon Roll, Japanese Cucumber and Pickled Daikon Roll. THIS IS A HANDS-ON CLASS LIMITED TO 20 PEOPLE, so sign up early! Your instructor would like to recommend that you bring: 1. Any kind of apron (although sushi is not particularly messy) 2. A sharp knife – any size will do. She will also have extra knives in case you do not have one you feel comfortable bringing. 3.
