FLIGHT CLUB


THE SPREAD OF FLIGHT CLUB It was 2012 when co-founders Steve Moore and Paul Barham had the idea of combining food with electronic darts. Three years later, the first Flight Club opened its doors in the UK.


The franchise operates seven venues in the UK and three in the US, with three more due to open soon.


After two years in the works, in December 2021 the Flight Club opened its first location in Perth.


Capitol Corp, the master franchisor for Australia, has already commissioned the design for a new venue in Fremantle, with a plan to open 20 venues across the country.

basically just the walls and a few power points, so we had to work closely with the services consultants to incorporate the mechanical, electrical and hydraulic services between each level.” Another element that a retail store naturally lacks are beer lines, which were added to the design to connect the keg cool room in the basement to the bars on the ground and upper floors. The small size of the kitchen forced the design team to find solutions to optimize the space. One of the many solutions was the choice of the pizza oven: “The menu of the Flight Club consists of sharing and individual options of pizza, pasta, burgers, steaks, and other modern Australian gastropub food that needs to be ready within 10-15 minutes of being ordered,” says Sequeira. “Due to the limited space and the configuration of the kitchen, we knew that there would be no room for a traditional static pizza oven, so we opted for one with a conveyor and a heat recovery system that didn’t require any exhaust hood above it. At the same time, we wanted to futureproof our solution: we knew that if pizza is going to be

We chose an oven that will allow the operator to stack another one on top if needed.” The refrigeration also required careful planning: “Having to work in a small space on two levels, the refrigeration system had to be remote, meaning that while the cabinets were installed in the kitchen and the bars, the condensers were placed remotely in the delivery area,” says Sequeira. “However, with residents and other businesses close by, the location was critical to ensure compliance with the environmental protection guidelines.” The refrigeration equipment was provided


by FCSI Allied Member, Williams Refrigeration Australia, which is part of the Ali Group: “We installed remote units throughout the bars and the kitchen to reduce the heat load and noise level, and make regular maintenance easier,” says Martin Healy, national sales manager. “As for the cabinets, we provided a combination of drawers and doors that helped make a small-sized kitchen very efficient.”


Hitting the bullseye Following the success of the first Flight Club, Capitol Corp has commenced planning to open three more locations in Fremantle, Melbourne and Sydney. For these venues, Capitol Corp chose to work again with Mario Sequeira and his team: “There were challenges such as meeting building code, food safety standards and maintaining collaboration with the rest of the consultants,” says Jamie Rhodes, chief operating officer of Capitol Corp. “We were fortunate to have an experienced FCSI consultant in our team, from the initial master planning stage right through to the completion of the premises.”
