BRILLIANT SEA BASS BUTTERS
Mix 100g of soft butter with a quarter tsp of salt, some freshly ground black pepper and your choice of fl avouring. Spoon the butter on to a sheet of cling fi lm, greaseproof paper or non-stick baking paper and shape into a 3cm-wide roll. Wrap up tightly and chill until fi rm.
❤ Fennel seed, chilli & garlic 1 tsp crushed fennel seeds, half a fi nely chopped chilli, quarter tsp crushed dried chillies and 2 crushed garlic cloves ❤ Sun-dried tomato, rosemary & olive 15g each of fi nely chopped sun-dried tomatoes and pitted black olives, 1 small crushed garlic clove and 1 tsp fi nely chopped rosemary ❤ Tarragon & garlic 2 tbsp chopped tarragon and 2 crushed garlic cloves
