Straccatelli zuppa


Very simples dish this which we used to prepare for the staff in the bistro. We used a chicken stock. I would recommend using the carcass of a roast chicken and add a couple of stock cubes to give it a bit more depth. Ideal for people on a low carb diet


Serves 4 Ingredients


1 litre Chicken stock 1 bunch of parsley or coriander chopped 4 eggs lightly beaten 50 g parmesan or Romano cheese grated

ormally I book my own hotels, fl ights, transfers, etc., but there are exceptions and this tour has to be one. To really make the most of Tunisia & the Sahara desert it’s as well to go with an established tour company that specialises in this sort of trip. I`ve used Preferred Travel several times & had some great experiences - particularly on this Sahara tour. They start you off with a couple of days near Tunis where you`ll take in the capital itself as well as the Medina, the ancient city of Carthage, the beautiful blue and white town of Sidi Bou Said plus more. You then embark on the interesting journey south, spending time in the Muslim holy city of 50 mosques, Kairouan. From there further south still to the fascinating Roman ruins at Sbeitla and then the oasis of Tozeur with its 266,000 date palms.


From here you take a trip on the old Lezard Rouge train through amazing canyons to the border of Algeria. You`ll experience several types of desert landscapes on this tour, the next one being the Chott el Jerid - the salt desert - where you`ll see the skeletons of vehicles which have dared to leave the road. On then to the desert town of Douz with its atmospheric market square where you can buy silver, spices and silks at a fraction of the cost you`d pay in Europe before


venturing by camel into the Sahara itself. Preferred Travel then take you east to Matmata where the troglodytes still dwell in caves and where you may actually spend the night in one of the cave bedrooms of your hotel. If this wasn`t enough they then take you to the east coast of North Africa to the old spice market town of Gabes, not far from the Libyan border. Then it’s time to head north again to the town of Sfax where you`ll visit the souq and then to El Jem with its amazing Roman amphitheatre. And fi nally you end the experiences of a lifetime with another night back at Port el Kantoui.


All this at half board from £719! The best time to visit the Sahara is March which is when Preferred Travel runs this tour. The hotels are good, everything is cheap and even though it’s a Muslim country you can still buy a pint of Tunisian beer, Celtia or their fi g brandy or whatever takes your fancy.
