He has opened a second pub, The Coach, also in Marlow, but it is the Hand and Flowers’ existence, not its Michelin stars or reputation as the best pub in the country, that he considers his biggest achievement.
“It’s still an achievement just putting food out every day. You have to keep your proposition lively and fresh, and you must impress with every mouthful. There is no end game - we are trying to be a bit better at everything we do every single day, even if it’s by tiny percentages, and I think that’s the way everyone involved in food should think. Never settle for second best and never settle for what was deemed good enough yesterday.”
