Most guys like nothing better than going to the neighbourhood pub or bar, throw back a few beers, order some finger food, and watch a hockey or football game with a few buddies. But memories, I mean the most cherished life memories, are not created there. Whether it’s a first date with your honey-to-be, a marriage proposal, your wife’s birthday/anniversary, a dinner and glass of wine to spend quality time together, or memories of taking aging parents and family out for special occasions, these are the special times that remain in our hearts and minds forever. There is something special about setting aside time to be with our loved ones; simply being together eating and chatting invariably is not just the happiest part of the day, but indeed our life. An intimate, or quality, fine dining eatery is the place to go for these special times. I cannot begin to tell you how many of these special life memories we, at Cabotto’s, have witnessed or shared with our customers over the last 40 years...when I pause and look back, it makes the heart beat a little faster. A dish which has always been very popular with the ladies is Stuffed Chicken Breast Principessa (Ital-


ian for Princess). There are many variations for this chicken dish. Our favorite is with asparagus, thin slice of ham and mozzarella cheese, baked in a mushroom, peppercorn, cream sauce. This is an excellent dish you gentlemen might want to recommend to your ladies. Or, if you are handy in the kitchen and enjoy cook- ing, you might want to give her a surprise and make it for her.


Serves 1 Ingredients


1 boneless, skinless chicken breast 4 or 5 oz 2 or 3 asparagus, depending on size 2 or 3 sliced mushrooms, depending on size

Shredded Mozzarella cheese Butter


Chicken base 4 oz. 35% cream Salt and pepper
