Planners like to bookTinto’s private rooms or the entire restaurant for memorable dining occasions. The Basque menu is influenced by an abundance of produce fromthe sea and fresh vegetables found in the western Pyrenees spanning the border between France and Spain. “Jose visited this region, brought back the cuisine and added his special touches,” says Moore. “You would have to go there to find any- thing like Tinto tapas.”
Some of those unusual offerings include halibut con espinacas en salsa de limon, alcaparras y patatas horneadas, which is sauteed halibut over garlic spinach, fin- ished with lemon sauce, capers and oven roasted potatoes; salmon a la parilla con salsa de gambas, a grilled salmon dish in shrimp-based sauce with white asparagus and mashed potatoes; and solomillo al grill, a perfectly grilled filet served with wild mushrooms, ragu sauce and oven roasted potatoes.
Tinto salads range from butter lettuce hearts with bonito tuna and white anchovies to roasted beets, marcona almonds and mixed greens. There are cheeses, cured meats, vegetable assort- ments and Spanish omelets. Desserts, including rich flans, chocolate tarts, and blended sorbets (who else but Jose Garces could innovate asparagus ice cream?) delight guests.
In short, meetings set at Amada or Tinto are cherished adventures, a primary goal among planners. Serving of tapas to groups is designed to encourage conver- sation and movement among guests, which satisfies yet another objective.
Hopscotching over to Italy next is a happy trip, particularly when the destination is Ralph’s of South Philly. This storied restaurant dates to the turn of the 19th century when Francesco Dispigno launched the family business in the heart of his neighborhood.
