SAUCE IT UP A scientific study at the University of Western Canada found that barbecue sauces are often packed with healthy ingredients like spices, fruit and veg, which boost your immune system.


GRILL THRILL Because fat drips off as you cook, a barbie can be healthier than frying. But be careful not to burn your food, as this is linked to cancers. Wait until the flames have gone and the embers are glowing before you start cooking. Remember to flip meat frequently for the perfect finish. You can also pre-cook in the oven or microwave before adding to the BBQ for that special smokey flavour.

THAW POINT Make sure food isn’t still frozen when you put it on the BBQ. Leave frozen meat to defrost according to the packet.


STAY WELL Don’t ruin things by getting food poisoning. Ensure all the meat is piping hot and not pink in the middle.


Don’t mix plates or utensils with cooked and raw meat - that way, you’ll avoid the danger of cross-contamination.


Also avoid leaving food standing around for too long. Throw away anything that’s been hanging about for more than a couple of hours. Remember to wash your hands after dealing with raw meat - germs spread fast. Keep a pack of antibacterial wipes handy for sticky fingers.


BEER TIPS There’s nothing wrong with having a beer with your BBQ treats. In fact, recent research shows it can be as good for your heart as red wine. But avoid dehydration by drinking plenty of water as things hot up.


WEATHER WITH YOU Dreaded downpours could put paid to your celebration. While no one can predict the great British weather visit the Met Office’s website - www.metoffice.gov.uk - up to five days before your big day. And if the heavens open then all’s not lost. Have a gazebo, a patio heater or some blankets handy just in case.


DON’T BE A FUEL Always use charcoal and NOT petrol. As well as being a fire hazard your gorgeous grub will taste like it’s just had a fill-up down the garage.
