Part of a series for Style of Wight, Aneke Spacie shares with you her immense talent and creativity for twisting simple classic recipes into exquisite gourmet creations.


A simple yet mouthwatering dish of smokey pork chops, smothered in a richly flavoured ale and apple juice glaze, accompanied by sweet caramelised apples.


serves 6 people Ingredients:


6 finest pork chops from your local butcher 6 generous slices of black pudding Salt and pepper


FOR THE GLAZE:


1 bottle of Island Ale 1 litre of apple juice 1 sprig fresh thyme


1 tsp of chopped sage leaves 250g butter, diced 1 crumbled pork stock cube (or pork trimmings) 4 slices of pancetta, roughly chopped


Metod TO MAKE THE GLAZE:


Fry the pancetta in a large pan until crispy, Add all the herbs, Island Ale, apple juice and stock. Reduce until you’re left with ¼ of the liquid. Whisk in the butter a couple of pieces at a time. Pass through a fine sieve and place in a clean sauce pan.


TO CARAMELISE THE APPLES:


Cover the apples with the sugar and quickly toss in a frying pan over a high heat until the apples turn golden and caramelise.


TO MAKE THE CHOPS: Season the chops well.


Place the chops along with the black pudding on the BBQ until cooked through.
