Courtney  and snow pea curry Ingredients 2 Tblsp olive oil


1 large brown onion, diced 2 cloves garlic, crushed 1 Tblsp ginger, grated 1 long red chilli, chopped  2 tsp ground cumin 2 tsp ground coriander 2 tsp ground turmeric 1 Tblsp tomato paste 2 tsp sugar


1 can crushed tomatoes 250 ml coconut milk 1 tsp garam masala


 





 

 (snapper/barramundi) sliced into 1cm strips


Sea salt and pepper to season 1 cup coriander leaves Steamed rice to serve
