What’s Cooking in the Kitchen of Teresa Spivey?
Cooking has been a major
part of life for Teresa Spivey of Weaverville. As a former Foods and Nutrition teacher, she loves to cook and has ever since she was young. Her mother, Evon Morse of Enka, first taught Spivey how to cook. “I was probably a preteen when my mom really started letting me make things. She would start meals and then let me fin- ish them,” Spivey recalled. “It’s ironic that I never took a high school home economics class and then grew up to teach it myself. When I was in college, I really became interested in nutrition. I knew I wanted to be a teacher so once I took my first foods class, I knew it was the right fit.” Spivey loves to prepare eth-
nic foods and admits that she is not a traditional ‘southern cook’. “I grew up on a farm and know how to make coun- try foods. But I honestly could be a vegetarian. I’m not much on meat but put it in most meals for the sake of my fam- ily.” Spivey’s favorite meals are simple but healthy. She also loves to bake. Spivey grew up in the Can-
dler area and is a 1988 gradu- ate of Enka High School. After her graduation, she at- tended UNC-Greensboro as a Teaching Fellow. In 1992, she graduated with her bachelor’s degree in family and consum- er sciences. Spivey taught at Enka High for eight years be- fore coming home to be with her young children. Years later she worked part-time as a Title 1 assistant at North Buncombe Elementary School. Since 2006, Spivey has enjoyed her job as a computer lab manager at NBES. Her husband, Dale, is the plant manager for Baldor, where he has been employed as an engineer for over 18 years. Tey are the proud parents of
two children: Shelby (13)
and Garrett (9). Tey are ac- tive members at First Baptist Church Weaverville, where Spivey enjoys teaching Sunday school, serving in children’s

ministry and preparing Wednes- day night meals. Spivey loves to read and exercise in her free time. Below are several of her unique recipes to try:
Cheddar Chicken Chowder
2 bacon slices 1 lb skinned, boned chicken breast, cut into bite-size piec- es
1 c chopped onion 1 c diced red bell pepper 2 garlic cloves, minced 4 ½ c fat-free chicken broth 1 ¾ c diced red potatoes 2 ¼ c frozen whole-kernel corn 1/2 c all-purpose flour 2 c low-fat 2%milk ¾ c (3 oz) shredded cheddar cheese
½ t salt ¼ t pepper
Cook bacon until crisp in
Dutch oven coated with cooking spray over medium-high heat. Re- move bacon from pan. Crumble; set aside. Add chicken, onion, bell pepper, and garlic to bacon fat in pan; sauté 5 minutes. Add broth and potatoes; bring to boil. Cover, reduce heat, and simmer 20 minutes or until potatoes are tender. Add corn; stir well. Place flour in bowl. Gradually
add milk, stirring with a whisk until blended; add to soup. Cook over medium heat 15 minutes or until thick, stirring frequently. Stir in cheese, salt, and pepper. Top with crumbled bacon. Yield: 7 servings (serving size: 1 1/2 cups)
Old Fashioned Soft Pumpkin Cookies
2 ½ c all-purpose flour 1 t baking soda 1 t baking powder 1 t ground cinnamon ½ t ground nutmeg ½ t salt 1 ½ c sugar 1/2 c butter (1 stick), softened 1 c LIBBY’S® 100% Pure Pump- kin
1 large egg 1 t vanilla extract Glaze (recipe follows)
Preheat oven to 350°. Spray bak-
ing sheets with non-stick spray. Combine flour, baking soda, bak- ing powder, cinnamon, nutmeg
and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradual- ly beat in flour mixture. Drop by rounded tablespoons onto prepared baking sheets. Bake for 15 to 18 minutes or until edges are firm. Cool on baking sheets for two minutes; remove to wire racks to cool complete- ly. Drizzle glaze over cookies.
Glaze: Combine 2 cups sifted pow-
dered sugar, 3 T orange juice, 1 T melted butter and 1 t va- nilla extract in small bowl un- til smooth.
Mom’s Banana Bread
½ c granulated sugar ½ c brown sugar 1 stick unsalted butter, soft- ened
3 large ripe bananas ¼ c milk ¼ c fat free sour cream 2 eggs 1 ½ t ground cinnamon 2 c all-purpose flour 1 t baking soda ½ t salt 1 c uncooked oats ½ c chopped pecans, toasted
Preheat oven to 325°. Spray
9 x 5 x 3 inch loaf pan with cooking spray. Cream sugars and butter in large mixing bowl until light and fluffy. Add eggs one at a time, beating well after each addition. In small bowl, mash bananas with fork. Add bananas, milk, sour cream to butter mixture and blend on medium low speed. In another bowl, mix together flour, cin- namon, baking soda and salt. Add flour ingredients to ba- nana mixture, mixing just un- til flour disappears. Ten gen- tly mix oats and pecans into batter. Pour batter into prepared
pan and bake one hour or un- til toothpick inserted in center comes out clean. Set aside to cool on rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.

Art of journaling A class that will incorporate elements of art, breathing and journaling
will be held at Weaverville Yoga every Tuesday through Nov. 2. Te class will be held from 10:30 am to noon. Te sessions began Tuesday (Oct. 5). New members will pay a pro-rated amount of $120.
