Procedure: Heat phase A and phase C up to 75˚C. When the temperature is up to 65˚C, add premix phase B into phase A and maintain medium slow stirring during 30 minutes to hydrate phospholipids. Add phase C into phase AB and apply a
maximum stirring during 3 minutes to emulsify the product. Cool down under medium stirring. Add phase D (ingredients one by one) below 40˚C. Sprinkle phase E in the formula under sufficient stirring to deploy the gel (around 600-800 rpm) during 10 to 15 minutes without incorporating air bubbles. Adjust the pH if necessary.
