Procedure: Heat phase A and phase C up to 75˚C. When the temperature is up to 65˚C, add premix phase B into phase A and maintain medium slow stirring during 30 minutes to hydrate phospholipids. Add phase C into phase AB and apply a
maximum stirring during 3 minutes to emulsify the product. Cool down under medium stirring. Add phase D (ingredients one by one) and phase E below 40˚C. Adjust the pH if necessary.

Procedure: Cold Process: Prepare phase A. Sprinkle Lecigel™ into phase A under medium to strong stirring. Let under stirring until no lump of Lecigel™ remains. Mix the ingredients of phase C together. Slowly and progressively add phase C
into phase AB. Between each addition of oil, ensure that it has been completely emulsified. Slow down the mixing speed. Add phase D under slow mixing until the product is homogeneous.
