Roux Scholarship 2015 names its six finalists

The names of the six finalists for the Roux Scholarship 2015 have been revealed. They are: l Scott Dineen, Goldman Sachs (BaxterStorey), London l Gavin Edney, Cliveden House, Taplow, Berkshire l Sabrina Gidda, Freshfields Bruckhaus Deringer (Restaurant Associates), London l Daniel Lee, JP Morgan (Aramark), London l Richard Pascoe, the Feversham Arms hotel, Helmsley, North Yorkshire l Ian Scaramuzza, Hibiscus Restaurant, London Dineen, Gidda and Pascoe all reached the finals for the first time last year. Lee was knocked out in last year’s regional finals, while Scaramuzza and Edney are both new to the competition. The finalists were chosen fol- lowing two regional finals on 12 March 2015 at the University of West London and University College Birmingham.

regional finals was to create a recipe for four people, using two whole guinea fowl (with or with- out giblets), weighing between 1.2kg and 1.6kg plus 200g chick- en livers, trimmed; served to- gether, plated and accompanied by a sauce and two garnishes. One garnish was to


include


spinach leaves and the other a garnish of the chef’s choice. Contestants had two and a half hours to cook their dish as originally submitted, along with a dessert they had to create from a box of mystery ingredi- ents given to them on the day. The finalists will now go on


to compete at the national finals on 30 March at Westminster Kingsway College in London, where the recipe details will be a complete surprise. Thirty minutes before the competition starts, the finalists will be given the recipe and ingredients for a main dish, either classic or modern, and asked to prepare and present it to the judges. Michel Roux Jr said: “The standard of cooking in London was fantastic and exceeded expectations. It was very diffi- cult to split them: no one over- cooked the bird, all were moist and almost everyone seasoned well. It’s the best food I’ve ever tasted in a regional final!” Alain Roux added: “Unfor- tunately for a few chefs using a water bath, some meat was undercooked and lost its shape. I don’t mind if the breast is rolled, but if you square and trim the bird, you lose the es- sence of the guinea fowl. “As a result of strong perfor- mances in London, Richard was the only finalist from Birming- ham. His dish was beautifully prepared and nicely presented, deboned with the legs and breast all worked in different ways.”

Chef and restaurateur Angela Hartnett is to open a second Café Murano, this time in Cov- ent Garden, London. Café Murano is expected to open in June this year at 34-36 Tavistock Street, following the opening of the original Café Murano at 33 St James’s Street in 2013. It will take a similarly simple and seasonal approach to Italian cooking in a relaxed atmosphere. Café Murano Tavistock Street will also feature a food and wine shop next door, specialising in

fresh pasta, sauces and Italian wines. Hartnett will install Rich- ard Lloyd, formerly sous chef at Hartnett, Holder & Co, as head chef of the new 140-cover restaurant. The menu will be northern Italian in focus, with an emphasis on coastal regions. Russell Stage Studios is de- signing the restaurant site, which is set across two floors. The ground floor will feature terracotta leather-upholstered banquette seating and dark wooden tables, with antiqued


mirror panelling on the walls. The 64-cover dining space up- stairs will have a distinct atmos- phere, with a glass roof, latticed with wooden tiles. Hartnett said: “I am thrilled to be opening Café Murano in the heart of Covent Garden’s Opera quarter. This area of Lon- don is cultured but laid back and that chimes completely with our approach to dining. I am looking forward to work- ing with Richard, whose matur- ing talent I have witnessed at Hartnett, Holder & Co, and to


making Café Murano Tavistock Street a unique and valued ad- dition to the area.”

Café Murano sites, Hartnett, who holds an MBE, runs the Michelin-starred Murano res- taurant and opened Hartnett Holder & Co with hotelier Robin Hutson and chef Luke Holder in 2013. She also launched Mer- chants Tavern in Shoreditch in 2013 with chef Neil Borthwick and Canteen founders Domi- nic Lake and Patrick Clayton- Malone.
