Autumn Pizza 1 pizza crust dough


1 cup mashed sweet potatoes or sweet potato casserole 1 cup shredded leftover turkey 1 cup chopped, fresh spinach 1/2 cup sliced mushrooms 1/2 cup thinly-sliced sweet onion 1 1/2 cups grated Gouda or Havarti cheese 1 teaspoon Italian seasoning


Preheat oven to 425 degrees F. Roll dough out to a 12-inch circle. Sprinkle baking sheet with cornmeal and place crust on sheet. Spread sweet potatoes evenly over dough. Top with turkey, spinach, mush- rooms, onion, cheese, and seasoning. Bake on cen- ter rack 20 minutes or until crust is brown. Let pizza stand 5 minutes before slicing and serving.


Shrimp and Green Bean Pasta 2 tablespoons olive oil 2 cloves garlic, minced 1 pinch red pepper fl ake 1/2 cup sliced, fresh mushrooms 1 pound raw shrimp, peeled and deviened 1/2 cup dry white wine


1 1/2 cups leftover green bean casserole 8 ounces penne pasta, cooked and drained Shaved Parmesan cheese


Add olive oil to a large skillet over medium heat. Saute garlic and pepper fl ake until garlic is soft, but

Turkey Croquettes 2 tablespoons vegetable oil 1 stalk celery, fi nely chopped 1 small onion, fi nely chopped 1 carrot, peeled and fi nely chopped 1/4 cup chopped parsley 1 pound leftover turkey, shredded 1 1/2 cups leftover mashed potatoes 1 1/2 cups breadcrumbs, divided 1 teaspoon poultry seasoning Salt and pepper to taste 1 egg, beaten Oil for frying


Heat 2 tablespoons oil in a deep skillet over medi- um-high heat. Add celery, onion, carrot, and parsley; cook until vegetables soften. Let cool slightly. In a mixing bowl, combine shredded turkey, mashed potatoes, 3/4 cup of the breadcrumbs, seasoning, salt, pepper, egg, and vegetables. Mix to thoroughly combine. Form into 10 patties. Press both sides of patties into remaining bread crumbs. Set aside. Add 1/4 inch oil to skillet and bring to medium-high heat. Add patties, in two batches, in a single layer until brown. Turn and brown other side. Drain on a paper towel and serve hot.
