CARDIFF DEVELOPS AN APPETITE FOR LIFE


Cardiff Catering is the in-house department of Cardiff Council and provides around 33,000 meals per day in more than 120 secondary, primary, and special schools. It had a HansDampf 6.1 Gold combi oven from MKN, installed this year to help meet the aims of Appetite for Life and the nutritional guidelines to improve the standard of food and drink in Wales. One of the aims laid down by Appetite for Life is that products pre-fried or cooked in oil are restricted, and therefore one of the main tasks for Chris Davies, the catering services manager at Cardiff Catering, was fi nding a suitable oven that could produce quality, oven-baked food to meet the schools’ needs. “We developed a number of Appetite for Life compliant products ourselves and MKN’s combi oven allows us to produce those in bulk,” said Chris. “For example, Go Cones is a seasoned, oven-baked potato product served in a cone; our aim was to produce a product that our customers would buy instead of chips, and it worked.” To put Chris’ words into context, single portion chip sales reduced from 11% to less than 1% of total sales in one school following the installation of the MKN oven – the total fat and saturated fat well within the maximum levels allowed with no detriment to meal numbers.


“MKN combi ovens are also extremely quick and give us a greater space to cook than a conventional combi oven. The footprint is the same size, but the internal capacity is much larger, allowing us to cook en mass more effi ciently than any other oven I’ve used before.”
