Nice Airport is bigger than it
looks.....Jo Austin talks to Marc Maisonneuve, gm of the region’s leading airline caterer
According to a little booklet I picked up dated 28 janvier 2011 published by Aeroports de la Cote D’Azur, Nice Airport is second to Paris in passenger volume, welcoming Air France, easyJet and British Airways as its major customers and including Emirates, Delta and Aeroflot, the list goes on. Its position close to Monte Carlo might help to make sense of it all. But who caters all these airlines?
And who feeds these reported 9,603,000 passengers who passed through the airport in 2010? There seem to be three sorts
of travellers who fly to Nice. The scheduled flyers, the low cost flyers and the million-, if not billionaires who do things in their own private way, be it in their jet or helicopter. As I landed on my low-cost flight
we taxied past row after row of small jets…

(one of this year’s Mercurys judges) is general manager of privately- owned Canonica Kitchen in Nice, one of four airline caterers for the airport. His job is to supply meals for the regular scheduled airlines across the
board. This can vary from caviar to a sandwich. Whatever, he does not seem phased. He loves Nice and has lived there for 45 years. “2012 will be a good year for us”
says Marc. Air France is coming back to Nice in a big way, BA demands quality Business class breakfasts and Delta is a major customer. Others include Lufthansa, SAS, Emirates and the private jets of Saudia, Qatar and Netjets. There is also a royal wedding and the G20 in 2011. There are just 70 staff at Canonica headed by Chef Serge Revello who has been with the company since day one. Nothing seems to phase Serge who sees a changing world where passengers want the very best but also value for money. Says Marc: “The Russians are arriving here in huge numbers and demand the very best but at a low price. It will be good when Air France starts its schedule of 13 flights a day between Paris and Nice.” This summer Nice Airport will welcome Transavia, Smartwings, Jet2. com, Vueling and Norwegian as well as new easyJet routes and three Qatar flights a week from Doha. The kitchen
provides an average
of 2000 meals a day.
