BREAD SOUP and to follow AMERI­ CAN MUFFIN GATEAU with Oddic’s Quality Bakers


ALTHOUGH there is not an outlet in Clitheroe, everyone has heard of or seen Oddie’s, the family bakers, which has 14 shops throughout East Lancashire Everyone thinks of Oddie’s as a Nelson


company because that is where the bake­ house and offices are, however, it turns out that the Oddie family come from Riming- ton, where they had a farm. There are apparently generations of


Oddie’s buried in the cemetery a t Gisburn. William Henry Oddie, who founded the bakery 100 years ago this year, turned his back on farming and left Rimington to train as a baker in Accrington. After he had completed his apprenticeship, he went to work in Colne, two of his sisters were already working in a bakery there. After marrying he bought a terrace in Primet Bridge, Colne, and turned the cellar into a bakehouse and the front room into a shop, called W.H. Oddie’s, and began trading. , The company is now run by Lara Oddie, ~


who is a mum of two small girls and great- granddaughter of W.H. Oddie and her father Bill.


BREAD SOUP Ingredients


fi 6 fl oz of extra virgin olive oil ® 3 slices of garlic ® 2 pints of chicken stock


® 800g tinned or pureed tomatoes ® 120 grammes stale bread (ciabatta , works really well)


Method 1. Soften the garlic until translucent in


theolrveoil. •2. Chop the tomatoes if using tinned


ones and add them to the pan. . 3. After 10 minutes add the stock. Bring


back to the boil. If the soup is not tasty enough then reduce it to the required inten­ sity by boiling. 4. Then add the bread and let the pan


stand in a warm spot for about an hour. 5. Add a dribble of olive oil to the top


and serve.


AMERICAN MUFFIN GATEAU Ingrcdicnls

Method 1. Remove the paper cases from the


muffins and slice each muffin horizontally into three. 2. Melt the chocolate, butter and one


tablespoon of the cream in a bowl over a pan of hot'water (be careful not to over­ heat). . ■ 3. Whip the remaining double cream. 5. Arrange nine of the muffin circles on a


plate so they are touching each other. C.Spread the melted chocolate over the


layer of cake and then spread or pipe the whipped cream over the chocolata 7. Carefully arrange the remaining nine


circles of muffins on top of the whipped cream and dredge the tops of . the gateau with icing sugar. (Chill before serving.)

B THIS weekend there is no excuse for not being able to find something to do. On Saturday, Chipping Agricultural Show is being held on the showground in the village. This long-established show features lots of attractions from heav’y horses and heifers, to cheese and chocolate. A fun day out for all the family. Also this weekend is the Hodder Valley family function in Dunsop Bridge and, on the other side of the Valley, is a charity cricket match at Read Cricket Club with a steel band, afternoon teas, bouncy castle and a barbecue.

David Hough, Hospitality Manager for Pendle Leisure Trust said ‘it is important that we offer a menu that suits our customers needs and offers value for money. As well as the new menu, the cafe is undergoing a complete revamp to provide a welcoming, comfortable atmosphere and we have undertaken furlher staff training to ensure we offer consistently high standards of both service and food’.


The cafe has also extended its opening hours and will be serving food from 12.30pm-9pm weekdays and 10am-6pm

Pendle Leisure Trust has once again confirmed its commitment to customers’ health and well-being with the planned launch of a new healthy eating menu at Pendle Leisure Centre in Colne.


The proposed new menu was discussed with existing customers of the leisure centre and with 99% of respondents agreeing with the move towards healthy eating, the new menu will be launched on September 12th.
