Love ‘em or hate ‘em, sprouts are a seasonal delicacy that cannot be avoided at Christmas. Don’t boil them forever though but give them a bit of TLC and you’ll have a side dish you will be looking forward to each year.
Not only does this side dish, supplied by Bramble Dining, look great on the table at Christmas time, it is also a great way to put some real flavour into sprouts at Christmas and make them enjoyable for everyone to eat. You can also add 50ml of double cream to this recipe and quite simply reduce the double cream until it has coated everything to make the side dish even more indulgent and warming this Christmas.

INGREDIENTS 250g fresh sprouts, prepared and blanched 4 medium sage leaves 60g pancetta cubes 1 garlic clove 1 handful cooked chestnuts 1 medium sized onion, sliced 1 tbsp olive oil Salt & pepper
METHOD Put the olive oil, pancetta and sliced onion in a frying pan and cook on a medium heat until the pancetta is half cooked and the onions have started to sweat down with a light golden colour.
Slice the garlic clove thinly and place in the frying pan with the pancetta and onions then add in the cooked chestnuts and sprouts. Toss the frying pan to get all the ingredients mixed together and keep repeating this process until everything is heated through and hot.
Just before serving add in the chopped sage and season to taste.
