Food & drink T
his phrase is as relevant now as it was in 2022 when, in response to the
Russian invasion of Ukraine, Andy Green set up Knead Peace – a collaborative baking initiative and community project inspired by Anna Makievska and Te Bakehouse in Kyiv. Living and working through the conflict, Anna and her team continued to bake every day, producing and distributing bread to soldiers, hospitals, older residents and families in devastated communities. Te Knead Peace
journey started with the creation of a cookbook focusing on baking. Bringing together recipes from celebrated bakers all over the world, the book* went on to receive a Gourmand World Cookbook Award. Now the Knead Peace journey continues, with
the opening of a bricks and mortar establishment in Dartmouth. Step through the brightly coloured door and you will be assailed by the scent of freshly baked bread and over-joyed by the racks full of handcraÅ¿ted loaves, pastries, cakes, pies and tarts, all made from scratch on site. Keen to do what they can to support home-grown, sustainable businesses, Knead Peace uses Wildfarmed and Stoates flours, Estate Dairy butter and Surface Roaster coffee. Once you’ve made the very difficult decision of
what to choose (I can thoroughly recommend the cinnamon bun), you can also grab a coffee and relax at one of their café tables, surrounded by vintage baking ephemera. Do check out the photos on the walls too, which give you an idea of where Andy’s passion for cooking came from – his grandad was a chef in the Strand Palace, London while his great-grandad had a passion for pastry. Clearly baking is in his genes. Andy is also keen that Knead Peace is a place to
learn, and to that end, will be offering hands-on baking classes, as well as hosting an incredible line-up
Knead Peace Recipes and ideas for making the most of our amazing local produce
of guest bakers including Ben Costello (from the Little Sourdough Kitchen, Fulham) and Richard Bertinet (who needs no introduction). Tere’s even a Date Night Baking workshop or Dads Baking session to tempt you. Community has always
been at the heart of Knead Peace, and Andy is keen to continue this tradition, offering an affordable house loaf and donating surplus bread to local food banks wherever possible. In the long term, he hopes that they will be able to offer training to local people to enable them to transition into the hospitality industry. And with Andy’s drive and enthusiasm this is probably just the start of a very successful journey for Knead Peace. *Te book includes recipes donated by esteemed
bakers from across the globe, from Tartine in the US to the River Café in London and Ten Belles in Paris, and by master bakers such as Richard Bertinet, Yotam Ottolenghi, Sally Clarke, Sarit Packer and Itamar Srulovich. For every print copy sold in the UK, £2.50 is donated to the Disasters Emergency Committee’s Ukraine Humanitarian Appeal
