Heavy grease contamination.
l Flexible ducting should be inspected for degradation, splits, or tears. Because of the nature of flexible ducting it is often cheaper to replace than to clean.
l Concrete sections of ducts should be monitored for cracks, delaminating, and ingress of water, as well as standard hygiene tests
l Plastic ducts should be checked for obstructions and extreme care should be taken during inspection as many plastic systems are used on fume cupboards etc.

l On fireproof ducts, only special access panels should be used. Any damage to the exterior of duct or doors must be reported immediately.
l All these items should be the subject of regular inspection as per the industry standard set by NAAD-21 & BSEN 15780
Kitchen system assessment in hospitals Regular assessment and cleaning are required and in the hospital environment, kitchen extract cleaning is often not completed as often as is required (see Figure 2). This is a legal requirement and assessing grease extract systems is a necessity in establishing correct cleaning frequencies and assessing component
condition. If you cannot gain access, you must make it clear that this is a requirement under legislation. What are you looking for?
l Correct number of access panels to allow testing and cleaning.
l Grease build-up in canopies. l Grease build-up in duct – horizontal and vertical.
l Grease build-up on extract fan. l Grease build-up in extract louvre vent. l Cleaning frequency.
Heavy build-up of grease and oils are a severe fire risk and, as a result, many insurance companies will not cover them unless professional cleaning has been carried out.
