CHIPOTLE CHICKEN SALAD


SEARED PORK CHOPS WITH APPLESAUCE

1 avocado 4 cups shredded romaine lettuce 2 cups chopped cooked skinless chicken breast 1 (8.75 oz) can no-salt-added whole kernel corn, drained and rinsed

2 tbsp canola oil 1 tsp Italian seasoning ½ tsp garlic powder 4 boneless pork loin chops


½ cup diced onions ¾ cup unsweetened chunky applesauce 2 tbsp chopped parsley


STEP 1 In a small bowl, combine the cilantro, yogurt, chipotle in adobo, chili powder, and lime juice. Season with salt and pepper to taste. STEP 2 Halve the grape tomatoes. Pit and thinly slice the avocado. In a large bowl, combine the lettuce, chicken, tomatoes, and corn. STEP 3 Drizzle dressing over salad and toss gently to coat. Arrange on serving platter and top with avocado slices.


Per serving: 282 calories, 11g fat, 2g saturated fat, 62mg cholesterol, 147mg sodium, 20g carbohydrate, 7g fiber, 7g sugar, 29g protein


Boneless pork loin chops


These lean, mild chops cook quickly, so they’re best grilled, broiled, or seared.


STEP 1 In a large bowl, combine the oil, Italian seasoning, and garlic powder. Season with salt and pepper. Add the pork chops and toss until well coated. STEP 2 Heat a 12-inch nonstick skillet on medium- high. Add pork chops and cook 4 min. per side, until cooked through. Transfer pork to a plate and cover loosely with foil. STEP 3 To same skillet, add the onions and cook 5 min., until golden, stirring often. Stir in the applesauce, parsley, and ¼ cup water. Cook 1 min. Remove from heat. Season with salt and pepper to taste. Serve pork chops with applesauce.
