2 cups fresh mixed berries 1 tbsp sugar (optional) 1 large egg 2 tbsp olive oil ¾ cup low-fat milk


1½ cups Nature’s Promise® Gluten- Free Pancake & Waffle Mix Cooking spray Whipped cream, for garnish


STEP 1 Hull and thinly slice strawberries, if using. To a cutting board, add ½ cup mixed berries and gently mash with a fork. Place in a medium bowl with remaining

berries, sugar if desired, and 2 tbsp water; toss to combine. STEP 2 In a large bowl, whisk together the egg, olive oil, and milk until well combined. Add the pancake mix and stir until just combined (some lumps are okay). STEP 3 Spray a 12-inch nonstick skillet or griddle with the cooking spray and heat on medium-high. Add ¼-cup scoops of batter to skillet and cook 1–2 min., until edges begin to set and bubbles start to form. Flip pancakes and cook 1 min., until bottoms are golden brown. Repeat until all pancakes are made. Serve pancakes with berry mixture and whipped cream.
